Mark Pellegrino was born in 1965, so we can reasonably assume that Nick is in his forties. Certainly he can't have been one of Azazel's special kids, because Azazel didn't start making deals until 1972 at the earliest, and the kids started being born ten years after that.

I actually think Azazel went looking for people to make deals with the moment he left the convent in 1972. (October, I think is what the article Sam found says, but I can't find it. May would make more sense to me, because Lucifer Rising very definitely happened in May, and the sense of urgency Ruby and Lilith both showed suggests the date was important, so an anniversary makes the most sense.) Criteria, one, capable of being a vessel, two, in ten years will be capable of bearing or fathering a child who will be capable of being a vessel, three, wants something Azazel can give them and isn't skeptical enough to stay clear of his too-good-to-be-true promise. Nick wouldn't have been quite old enough to be tapped. Looks like he found one every couple days, unless three in Lawrence and environs is unusually high. And I suspect he knew he'd hit the jackpot with Mary, so Sam's the youngest of his lot.

(I also suspect he was scooting the kids off to Cold Oak in age order, so Jake, Andy, and Lily were all a couple weeks older than Sam tops, and Ava five months older. So Sam would be the only one still twenty-three when he said they were all twenty-three, but the inaccuracy wouldn't ping Jake or Lily as invalidating the weirdness because their birthdays were only just past. And the reason Ash only found Sam, Andy, Scott, and Max as house fires involving six-month-olds born in 1983 is because he was only told to look for kids born in 1983, so there might be another few fires involving kids born in the back half of 1982. Also I suspect Lily is the daughter of whatshisface Whitshire. And Holly Beckett was what, eighteen when Andy and Ansem were born? So eight when she made her deal. In my head the negative-ten-year anniversary of her kids' birth marks the day a relatively wealthy man began his whirlwind courtship of Holly's mother, and Holly gave her kids up for adoption because she was not about to be a single teen mom like her mother was.)

Once Azazel decided he had enough potential parents on tap, I figure he found a hole to hide in till it was time to start ensuring every one of the parents was fruitful and multiplying on time. Then he was running all over everywhere ensuring conceptions and then running all over everywhere checking on the births and then running all over everywhere for the six-month checkups. And then I figure he started a new round of deals, just in case something happened to the winner of Survivor Cold Oak before Lucifer rose. So there's another batch of kids born between winter 1993 and winter 1994, a few of whom lost a parent to a fire at six months old, and another batch of kids born between summer 2005 and summer 2006, and how many fires did John say he'd seen, six? Seven? And that third batch would be Plan B Mark II, but mostly they'd be to tempt out John and Dean Winchester, because Azazel knew Dean knew where to find the Colt, which Azazel needed to get the Devil's Gate open to let Lilith out. He might have done another round of deals after those kids' six-month visits, except after IMToD he had the Colt, so he could focus on Sam's generation with no worries.
